What a really sharp knife? Using these strips on some hardboard or thick glass will get your knife in tip top shape. When your set is getting to the point where it really isn’t sharpening as well as they used to just lift off the strips and replace with new ones. They come off fairly easily. Be careful when you are done because your knife will be REALLY sharp will go through the wood almost like butter.
