Good question, Melanie.

I do hone my knives every 20 minutes or so to maintain the Scary Sharp edge.

Following this honing routine, I can’t think of the last time I had to sharpen my knives. I’d sharpen if the tip were to get rounded, but this won’t happen as long as the blade is held flat on the strop while honing. If the blade were to get nicked I’d also need to sharpen. But seeing as I keep my knives in a Knife Box and handle them carefully when they’re not inside the box, that won’t happen.

Maintain the edge by honing every 20 minutes and you’ll spend more time carving with a Scary Sharp Knife!
